About us

For ten years we made sushi in the Netherlands. Then we moved to Spain for a quieter life. But some things are hard to leave behind.

About me

My name is Manuel, and making sushi has been a big passion of mine for more than ten years.

For many years I was the owner of a sushi delivery service in the Netherlands. During that time we prepared thousands of orders and built a loyal group of regular customers. Over the years we also collected more than 3,500 reviews, something we still look back on with pride.

For me, sushi has never been about adding lots of sauces or creating overly complicated combinations. Good sushi is about balance, quality, and pure flavour.

The rice has to be right.
The fish has to be fresh.
And everything needs to be perfectly balanced.

I always say: try sushi with as little soy sauce as possible. Not because you shouldn’t use it, but because it’s a shame when the flavour of the sushi itself gets lost.

Our mission is to introduce people here in Spain to sushi the way we believe it should be.

Not overloaded with sauces, but sushi where you can truly taste the ingredients and balance of flavours.

Our story​

After ten intensive years running our sushi business in the Netherlands, we felt it was time for a change. We had built a successful company and eventually sold it.

Our plan was simple: a quieter life.

We moved to Spain hoping to slow things down a little — less pressure, no more late evenings, and no more working weekends.

But some things are hard to leave behind.

Making sushi, experimenting with flavours and seeing people enjoy what you create is something special. And after a while we realised we missed it.

That’s how the idea for Mundo Manuel was born.

Not another busy delivery business like before, but something smaller and more relaxed, fitting the life we want to live here.

A small tip from us

When you eat our sushi, try it first without soy sauce.

Taste the rice, the fish and the balance of the roll.

You can always add soy sauce afterwards — but you might notice that it’s not really necessary.

Our concept

Mundo Manuel is not a restaurant.

We prepare fresh sushi for takeaway, simple and without unnecessary extras.

We are open only on Thursday and Friday, from 14:00 to 17:30.

Orders can be placed until 15:30 on the same day, or you are always welcome to walk in while sushi is still available.

For us it’s not about selling as much as possible, but about people coming back because they know the sushi is simply good.

Our goal is simple: to let people enjoy great sushi.

We hope more and more people here discover our sushi and that it becomes something people look forward to on Thursdays and Fridays.

Curious to try our sushi?

We are open for takeaway every Thursday and Friday from 14:00 to 17:30.

Orders can be placed until 15:30, or simply walk in while sushi is available.
